Pizza Dough

Thanks goes to my friend the baker for this pizza dough recipe.

This is what she starts with:

Pizza Dough Recipe

A “preferment” of the yeast is recommended.  To do this, put 1 tsp of yeast into 1/2 cup of warm water with a pinch of sugar, and place this in a warm oven.  IMPORTANT: A “warm” oven means never above 130 degrees – anything above 130 and you’ll kill the yeast.  An easy way to do this if you have an older oven is to turn the oven on for a time and then off again.  Let the yeast brew in the warm oven overnight.  Doing this will give your dough more flavor.

When you’re ready to make the dough, add the additional cup of water and 1 1/2 tsp of yeast to the yeast that’s been brewing in the warm oven, and add that the rest of the ingredients on the above recipe card and follow the instructions.
