Garden Fresh Spaghetti Sauce

Ingredients:

5-10 garden fresh tomatoes – depending on size (diced)

1-2 garden fresh onion (diced or minced)

2-4 garden fresh hot pepper – chili, serrano, jalapeno, habanero, etc. (chopped or diced)

Baby Bella mushrooms (sliced)

To Prepare:

Place diced tomatoes in a sauce pan with a light coating of olive oil. Add the onions, peppers, and mushrooms and let sit over medium-high heat for 10-15 minutes, then turn heat down to low. While the sauce is simmering, add garlic powder, oregano, basil, salt and pepper to taste.

Serve over spaghetti or angel hair and top with avocado.

TIP:  To slice an avocado as a garnish, cut the avocado in half and remove the pit, then slice the skin ONLY down each half length wise. If the avocado is ripe, you should be able carefully peal the skin away from the fruit, leaving two pealed avocado halves. Slice the avocado length wise, leaving a bit at one of the ends unsliced. This will allow you to fan the avocado slices without the peaces completely coming apart.
