Ingredients:
Gauc
3 Avocados (squished)
2 Roma Tomatoes (diced)
1 Onion (diced)
1 Mango (diced)
2 Limes (squeezed)
1 Jalapeno (diced)
Beans & Rice
Brown Rice
Black beans
To Prepare:
Combine all the ingredients for the guacamole and stir together until it looks like guacamole. Pretty simple. I found that adding a bit of balsamic vinegar makes all the flavors play together a little better.
The black beans I seasoned with a little house spice. Put the beans on top of a bed of rice, and spoon the guacamole over top.
